The booking option was created by using the date range for each rate to create the date ranges in the Booking Option. Then we copied over the resource hours as availabilities for each date range. Finally, each product that had the same date range in the rate structure was assigned to each availability in the date range. Please see the following diagram for a visual of the migration.
